Chipotle Chuck Roast

Ingredients                 (chipotle chuck roast)

  • 2 to 2.5 lb. grass fed pasture raised chuck roast
  • 14 oz can diced tomatoes (drained)
  • 1 medium onion (chopped)
  • 2-3 chipotle peppers canned in adobo sauce, finely chopped (remove seeds & add some of the adobo sauce too) 
  • 2 tsp dried oregano
  • 3/4 tsp ground cumin
  • 2 cloves garlic minced

 

Directions

Trim excess fat from meat if desired.  Place all ingredients into a large crock pot.  Cover and cook Chipotle Chuck Roast for 8-10 hours on low; do not remove lid during the cooking process.

Pull apart meat with 2 forks and serve with organic baby red potatoes, or use tortillas, shredded cheddar cheese and sour cream to make burritos.
